If you haven't figured it out by now, I love quick, easy, healthy, delicious recipes.
This recipe for Rush Hour Chili, came from some cookbook I got from the library. Shame on me for not giving credit to my source! I always lecture my students on this! Honestly though, I don't know where the recipe came from. Shrug.
Here goes...
Rush Hour Chili
Ingredients:
- 1/2-1 lb lean ground beef or ground turkey (optional), cooked
- 1 can of kidney beans, rinsed
- 1 can diced tomatoes, undrained
- 1 can (6 oz) tomato paste
- 2 cups cold water
- chili powder---lots!
- chopped onion and green pepper (optional)
- toppings: low fat cheese, sour cream, crackers
Directions:
- Stir all ingredients, minus the toppings, into a large pan (I use my small soup pot) and heat until it's boiling. Reduce heat to medium-low, cover, and simmer until hot. Stir occasionally.
- Ladle into bowls. Top. Eat.
To make chili mac: Cook whole wheat pasta as directed. Top with chili.

I like to make this recipe, too. I also add some cumin and some dried oregano. It's also good with diced chipotle peppers in adobo sauce (I dice one pepper, and add 1T of the sauce; the rest of the peppers can be refrigerated for a LONG time.) I mix up the beans I use; sometimes, I use pinto, sometimes kidney, and sometimes black. They're all yummy!
mmm.. this is so similar to the chili I make. I love it!

Hi, I've been by your blog several times now and its chock full of stuff I like. I love chocolate and baking, though I cannot follow a recipe as written. Have had some cookie disasters trying to healthify them. Currently, I have cut back on baking because I EAT IT ALL, and we discovered that my baking gives me and the husband gas. Er, have that problem?
