Homemade Salsa


My family recently joined us for Sunday lunch. My mom brought this fabulous salsa with her along with a copy of the recipe.


Mexican Salsa


Ingredients:


  • 2 cans black beans, drained

  • 2 cans Southwestern corn with peppers, drained

  • 2 small cans of diced tomatoes with cilantro and lime

  • 2 small cans of diced tomatoes with onion

  • 1 can sliced black olives, drained

  • 1 small bottle of zesty Italian salad dressing

  • 1 can butter beans, drained

  • 1 cup of cilantro, chopped

  • 1 bunch of green onions, chopped

Directions:



  • Mix all ingredients together and refrigerate for one day before serving.

Ideas:



  • Obviously, chips and salsa! This is how we ate it with our lunch.

  • The next day, mix in 1/4+ cup of salsa with lettuce. Makes an excellent salad!

  • This salsa would also work well on tortillas.

  • Excellent for parties and potlucks.
