My family recently joined us for Sunday lunch. My mom brought this fabulous salsa with her along with a copy of the recipe.
Mexican Salsa
Ingredients:
- 2 cans black beans, drained
- 2 cans Southwestern corn with peppers, drained
- 2 small cans of diced tomatoes with cilantro and lime
- 2 small cans of diced tomatoes with onion
- 1 can sliced black olives, drained
- 1 small bottle of zesty Italian salad dressing
- 1 can butter beans, drained
- 1 cup of cilantro, chopped
- 1 bunch of green onions, chopped
Directions:
- Mix all ingredients together and refrigerate for one day before serving.
Ideas:
- Obviously, chips and salsa! This is how we ate it with our lunch.
- The next day, mix in 1/4+ cup of salsa with lettuce. Makes an excellent salad!
- This salsa would also work well on tortillas.
- Excellent for parties and potlucks.
