Jack Stack BBQ

About a month ago my husband, baby girl, and I headed to Kansas City, MO to finalize our daughter's adoption. We have heard KC has some fab restaurants. We hit Jack Stack on the Plaza an hour after we got out of court and were not disappointed.

I'm not a BBQ fan. In fact, most of the time the scent makes my stomach churn. I'm actually not a meat fan in general and could easily be a vegetarian. However, for the sanity of my husband (plus the occasional desire to binge on Italian beef or Wendy's chicken nuggets), I do serve meat with our meals. And I do subject myself to new restaurants with the hopes that something on the menu will statisfy my hunger.

BBQ is my husband's favorite food. While he indulged in some sort of platter (America, right?) which was laden with meats and sauces, I had the most fabulous (fire roasted) salmon and a baked potato. (I don't know about you, but I get on these food kicks. Lately it's been baked potatoes and veggie pizza). But what I really wanted was dessert! (Is it possible for me to just eat dessert for the rest of my life and not compromise my diabetes care? I wish!).

Generally, we are pretty cheap dates. Our drink: water. No appetizers. Our entrees are never steak or the $20 dish of the night. We try to be economical as well as healthy. Oh, and never dessert. Does anyone else think it's insane what a restaurant charges for the most basic desserts like a brownie with ice cream?

Anyway, we were celebrating an important landmark in our adoption journey and decided to splurge. My husband had the vanilla rum bread pudding (at my vigerous prompting). I chose the triple chocolate brownie, of course. Neither had a price listed. We didn't care.

We indulged. And it was worth it!

But, as we were getting ready to leave, I shifted in my seat (you know one of those with slabs on the back) and managed to get my insulin pump insert pulled....meaning I had no clue if I had actually gotten all my insulin from dessert or not. GRRRRR. I was so frustrated! Yet the taste of residual chocolate calmed some of my anger. And the fact that the desserts were shockingly only $6 each helped.

Anyway, if you're in the KC area, I highly suggest Jack Stack. If you have diabetes, arm yourself with some extra insulin and enjoy!
